Dinner Tonight: Greek Salad with Dill and Parsley

greek-saladAfter finding out that dill and parsley are a cancer-fighting super duo, I knew I had to share this recipe for Greek salad. I have posted a similar recipe before, but the added hint of dill and parsley just adds a really nice flavor.

My husband and I first tried a similar salad from the salad bar at a local grocery store. It was so fresh and crisp, and summer perfect. It was also very expensive! So I thought, I could make it at home at a fraction of the cost. The great thing about this recipe is that you can adjust it to your taste.

Dinner Tonight: Heart-Healthy Tomato Soup

tomato-soupOur last recipe in honor of American Heart Month is a lycopene-rich tomato soup. Better than anything you will ever get in a can, this heart-healthy recipe is loaded with antioxidants, particularly lycopene. Lycopene is the carotenoid that gives tomatoes their red color. It is particularly beneficial for cardiovascular health and heart disease prevention.

When it comes to heart health, studies have discovered that high levels of lycopene in the blood are associated with a lower risk of cardiovascular disease in both men and women. It may also have cholesterol-lowering properties.

Lycopene’s Health Benefits

Recent studies suggest that a diet rich in tomato products (one of the best sources of lycopene) is strongly linked to a healthy immune system, as well as prostate health. Lycopene, the compound that gives tomatoes their red color, may also benefit heart health in men by boosting the body’s natural antioxidant defenses and protecting against DNA damage, according to a new study.

Participants of the study who took 15mg of lycopene per day had a reduction in systolic blood pressure and a decrease in levels of high-sensitivity C-reactive protein (hs-CRP). CRP is a marker of inflammation in the body and is reported to be an independent predictor of cardiovascular-related events.

Aside from supplements, food sources of lycopene include tomatoes (highest in cooked tomato products like tomato sauce), red carrots, pink grapefruit, red oranges, papaya, and watermelon. More recently, orange heirloom  “tangerine tomatoes” have shown to even have higher concentrations of lycopene than red tomatoes.
