GORP cropFor years I have heard the term GORP and associated it with trail mix but never really knew where the name came from. Well, thanks to Google, I have recently found out that GORP may be an acronym for “good old raisins and peanuts” or alternately, “granola, oats, raisins, peanuts.” But whatever the acronym, GORP is trail mix and can be a nutritionally dense and tasty treat that can provide long-lasting energy, making it perfect for summer outdoor activities like hiking.

Snack Today: Maple Nut Granola

maple nut granolaIt is maple syrup season and really it is our first spring crop. I am lucky to be surrounded by sugar maple bushes and and maple syrup festivals are kicking into high gear. If you ever have the opportunity to check out a maple syrup farm, you will not regret it. The amount of work and love that goes into producing maple syrup is truly something.

The time period for sugar water collection is short, usually occurring during two to three weeks in March and April. Dessert Today: Cantaloupe Salad

cantaloupeGrowing up, lunch and dinner were always followed by dessert. Dessert was not cake and ice cream, it was whatever fruit was in season. I have fond memories of my dad just slicing up mangoes, honeydews and even pineapples at the table and passing around slices. Cantaloupes were one of my favorites!

Today’s Snack: Nutty Maple Granola

granolaGranola is one of those things you can have for breakfast, lunch, snacks, dessert… basically any time of day. It can be eaten as is (think trail mix), or added as a topping to yogurt, cereal, or even ice cream.

This nutty maple granola recipe combines a few of my favorite things like coconut, maple syrup, hemp hearts and hazelnuts, and a handful of this granola is loaded with antioxidants, protein, good fats and fiber. This recipe also includes cacao nibs. Cacao nibs are cacao beans that have been roasted, separated from their husks, and broken into smaller pieces. Healthy Snack: Zucchini Chips Recipe

zucchini-chipsIf you can devour a bag of potato chips in one sitting, then you need to try this zucchini chips recipe. These chips are delicious and full of flavor, plus they are loaded with health benefits.

Zucchini is part of the summer squash family. One cup of zucchini only has 36 calories , but is chock-full of nutrition. It contains 10% of the RDA of dietary fiber, and is a great source of folate, vitamin C and vitamin A, potassium, and 19% of the RDA for manganese, a trace mineral that helps the body metabolize protein and carbohydrates, participates in the production of sex hormones, and catalyzes the synthesis of fatty acids and cholesterol.

Baked with basil (one of my faves) and rosemary, I bet you won’t be able to eat just one!

Zucchini Chips Recipe

5 medium zucchini
3 tbsp Olive Oil
3 tbsp basil , torn into smaller pieces (you can use dry, but use fresh, if you have it)
3 tbsp rosemary, chopped (see basil)
1 1/2 tbsp pepper
2 tbsp sea salt
